2 Superbowl Appetizers in 20 Minutes

Prepare two appetizers for Super Bowl Sunday in 20 minutes with these recipes from Kathy Katz, owner of Cooper Street 20/20.

Kathy has owned and operated several cafés about town prior to opening her grab-and-go catering company in Cooper-Young. Among her former restaurants: the 20/20 Diner at the Southern College of Optometry, the first Café Palladio(inside Palladio Antiques) and the Unknown Café inside the Cotton Exchange building downtown. She has been a vendor at area farmers’ markets for over five years, and, she adds, “I have catered every weekend of my life!”

Kathy describes her style of cooking as “food with attitude.” The selection at Cooper Street 20/20 emphasizes fresh, local ingredients and variety. She is especially known for her soups, her pimiento cheese—they prepare 20 pounds of pimiento cheese per week—and gourmet spreads. Your menu for an everyday dinner or special event is in good hands with Kathy and Chef Stephen Sciara at Cooper Street 20/20.  In addition to a fridge full of prepared foods to pick up, 20/20 offers a weekly $15 “TV Dinner” for two (includes an entrée and two sides for each person) and seasonal specials. Traditional Hummus

Recipe type: Appetizer
Cuisine: Hummus

Prep time:  10 mins
Total time:  10 mins

Serves: 1½ cups
 
Simple spread or dip
Ingredients
  • 1 14-ounce can chickpeas, rinsed and drained
  • 2 cloves garlic
  • 6 sprigs parsley
  • ¼ cup tahini (sesame paste)
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
  1. Add everything to the food processor but olive oil. Pulse four to five times; then add olive oil and process until smooth. Serve with toasted pitas or cut vegetables.


Black Olive Tapenade

Recipe type: Appetizer
Cuisine: Tapenade

Prep time:  10 mins
Total time:  10 mins

Serves: 2 cups
 
Easy spread made primarily with black olives.
Ingredients
  • 16 ounces Kalamata olives, drained and pitted
  • 2 sprigs fresh rosemary
  • 1 clove garlic
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
  1. Combine all ingredients in a food processor until you achieve a coarse paste. Tapenade is easy and tastes great with grilled pita or sliced veggies.

A variety of spreads, such as the Traditional Hummus and Black Olive Tapenade, on French rounds with a few garnishes on top will make a colorful game day display.

The song “Crawfish” from the movie “King Creole.” A steak from The Western Steakhouse on Madison was always a favorite of mine. When Elvis died, I lived in Billings, Mont., and my grandfather called me to let me know. Well, the telephone operator was apparently listening to the call, and when Grandpa told me the news, she screamed to all the other operators, “This call is from Memphis, and Elvis is dead.” She sighed; we sighed and all hung up. It was a sad day.
